Unique Champagne Food Pairings

Oysters & Champagne, Caviar & Champagne  are some of the classics but booooring since we are now drinking more Champagne and not always have access to Oysters or Caviar!

Classic Champagne food pairings are great for starters, but what happens after you’ve we finished the same old tired combinations? It’s time to get unique and try some Champagne food pairings that can be enjoyed even when you are not wearing a tuxedo. Besides Champagne, there are a lot of great sparkling wine pairings listed below such as Cava, Prosecco, Franciacorta and American bubbly.

Fried Mushrooms

It’s a little known secret that fried food and Champagne are best friends. Go for a Blanc de Noirs (a white sparkling wine made with dark grapes like pinot noir) with fried mushrooms. The earthiness in the mushrooms is complimented by the more rich fruity/earthy notes that you’ll find common in a Blanc de Noir. An affordable American Blanc de Noirs such Gloria Ferrer

Mac & Cheese

One of the greatest favorite Champagne pairing  is homemade macaroni and cheese. There are a few important ingredients here for the perfect pairing; the right cheese, the right Champagne, and the right toppings. Don’t get carried away with a sharp cheese. Consider a softer creamery cheese with flavor such as smoked gouda. The Champagne needs to be acidic enough to cut through the cheese without being so strong as to ‘turn’ the cheese. Toppings can be used to fine tune the dish, from pancetta, to truffles, to toasted breadcrumbs. For example, if you were using the smoked gouda, toasted breadcrumbs would be a nice topping to add some crunch and dilute the cheese. Also, when making your mac & cheese use butter, a little cream and american cheese as a base and the flavoring cheese in moderation.

Butternut Squash Ravioli w/Brown Butter Sageunknown

This is a rich but delicate dish…both sweet and earthy as a result of the use of sage and roasted butternut squash. Because it is a slightly sweet dish, it’s important to find a bubbly with inherent sweetness. This classic Italian ravioli dish does wonderfully with Italy’s premiere sparkling wine called Franciacorta. Franciacorta is from Lombardy and actually uses many of the same grape varieties as proper Champagne such as chardonnay, pinot nero (noir) and pinot bianco (blanc). When made with added pinot nero, Franciacorta takes on fruity strawberry notes and a richness of flavor. Franciacorta still hasn’t exploded in the marketplace as much as Champagne so you’re likely to find excellent value from this region. The flavors tend to have slightly less acidity and more fruitiness than most Champagnes and the same toasty-almond character occurs with aging.

BBQ Chicken Sandwich

Mmmmm…BBQ and Cava. Use a smoky BBQ sauce and avoid having sauce with too much spice. Pick a sparkling wine that isn’t too subtle so that the BBQ doesn’t overwhelm the delicate flavors. Think of a slightly spicy, tangy, smoky sauce on your chicken (or tofu if you’re a vegetarian!). Consider adding caramelized onions and just a few gorgonzola crumbles. Pair this sandwich with a bottle of Cava or Prosecco. Although most value cavas don’t have the delicate complexity of a Champagne, they work perfectly to balance the intensity of something simple like BBQ. chicken over pork or beef as the flavor of chicken is lighter than pork and beef, lending it to a better pairing with bubbles.

Vegetarian Red Bean Chili

This is one of the first non-traditional Champagne food pairings  but  experiment with based on a recommendation.  The champagne  made my cheapo chili taste like god food(what does that mean? I don’t know but it sounds right). It’s the moment where you have your cheddar-cheesy chili bite in your mouth and then you wash your mouth out with it. Cava and red bean chili is a thing. Tell your friends.

Angelenos  come out to watch world-renowned polo player and event co-founder Nacho Figueras and his team. It was hard to head-to-head against some of the best polo players in the world, all while sipping Veuve Clicqot champagne and enjoying fare from beloved caterer Wolfgang Puck. Are Big bottles of Champagne more fun?

Opening a large bottle of Champagne is certaintly very magical and entertaining making  an even grander statement. Whether it’s a magnum which holds the equivalent of two regular bottles of wine or a massive 4-bottle Jeroboam, bigger bottles are a smart and easy way to please a crowd.

 

Looking back on bottles of bubbly with friends over the years, the larger format bottles seem to stand out. We celebrated wrapping up shooting for my book The Bubbly Bar with a magnum of Veuve Clicquot; I remember sharing the same wine with Tony Hawk and his friends at a party in their backyard. Krug’s rich and toasty Grande Cuvee flowed freely from magnums at an over-the-top press trip to show off the brand’s custom hot air balloon.

The cool thing about larger bottles is that ounce for ounce, they’re no more expensive than the 750. And besides their impressive size, larger format bottles win in the taste department when compared to the usual 750 ml bottles. I learned this lesson after a long and windy drive up to Mendocino County to visit Roederer Estate. The tasting room hosts pour their non vintage brut from a 750 ml bottle and a 1.5 liter magnum and letting guests taste the two side by side. The wine from the 750 was deliciously crisp and bursting with fresh green apples; the same wine from the magnum had these richer, toasty notes that usually are found in a wine that’s much older and more expensive

Create a Tasteful, fun Bar Cart for your guests!

It’s not hard to create a Tasteful   Mobil cart in your apartment or house.  Now is the time to recharge to full energy and check off all the boxes that you’ve wanted to do for some time now.  It’s the time of year to really get motivated to start new exhilarating projects and actually finish them.

After much entertaining and being entertained in 2012, I’ve noticed that nothing makes more of a statement at an intimate gathering than the hosts ‘bar’.  This is because it’s not just a place to make a cocktail or pour a glass of wine, but yet it’s a time when you are interacting with other guests and can ‘make a drink’ and even a friend at the bar.  How many times have you said,  “Want to make another drink”?  I’m sure plenty.   Your bar is your chance to show your guests your personal style and since it is the center focus of your party, wouldn’t you want it to be a masterpiece?

As we  have entered  into 2013 it is time.  Time to clean up your ‘bar’, get rid of the clutter and start with a clean slate filled with fabulous wines going into 2013. So wipe off the lingering champagne drops from your  previous party, get ride of those half full bottles and start fresh with a stylish yet tidy bar (get rid of clutter!).

 Here is some great   interior décor,  few ideas on prepping your bar for another  amazing year!

Essentials for creating a ‘Tasteful’ bar!

  1. Always have Pellegrino glass bottles
  2. 2 bottles of nice champs (Veuve Cliquot, Louis Roederer, Ruinart, Moet etc.)
  3. Add fake or real limes in a nice dish
  4. A pop of color can add a nice touch to your bar. Try adding a colorful flower in a vase
  5. Incorporate some sort of interesting glassware
  6. Throw a few fab crystal wine stoppers on for decoration or slices of geode coasters in a fun color to go with flowers
  7. Come up with a theme and make sure everything complements each other. We  love working with metallics, such as gold with a bright pop of color of fuchsia or cobalt blue
  8. Keep out Clutter!!
